Alison's Gluten Free Cottage Cheese Pancakes
This is a fast recipe to prepare. Unlike many pancakes, it's thin, almost crêpe-like, but also filled with with protein from the cottage cheese and eggs. Fill it with your favorite fruit, and it's even better. Plus, it's gluten free!

Ingredients
- 1 cup cottage cheese (low fat works well, too)
- 6 tablespoons butter (melted)
- 1 ½ ounces gluten free baking flour (approximately 6 tablespoons )
- 6 eggs
- 2 tablespoons butter (not melted)
Instructions
- Set aside a large skillet or griddle
- Add the cottage cheese, melted butter, flour and eggs in a blender, and mix until just combined. If there’s a lump or two, that’s fine
- Heat a large skillet or stovetop griddle over a medium heat (see electric griddle note below). When it’s hot, add a small amount of butter (from the two tablespoons of unmelted butter), for just a thin layer on the skillet or griddle
- With a ¼ cup measure, pour out the batter onto the skillet, making two 3-inch pancakes per ¼ cup measure. Or you can make these any size you’d like
- Cook on one side for approximately 2 minutes, or until they begin to brown. Turn them over and cook for another minute or so, until they begin to brown
- Serve with maple syrup, butter, or your favorite pancake topping
Notes
NOTES:
- If you’re using an electric skillet, preheat the pan to 350°
- If you like small pieces of fruit in your pancakes, drop them onto the pancakes, in the skillet, before you flip them over. If you use small frozen fruit, such as blueberries, you don’t have to thaw them first
- These are thin pancakes, just a bit thicker than crêpes
- This yields approximately thirty 3-inch pancakes
