Asparagus with Burger and Tofu
This stir fry is so versatile, it works will with beef, as well as plant-based ground "meat." It's also perfect fas a busy week night meal. Plus, it's gluten free, and can be as spicy, or mild as you'd like!

Ingredients

  • 3 tablespoons oyster sauce
  • 3 tablespoons water
  • 2 tablespoons tamari (or soy sauce)
  • 2 tablespoons rice vinegar
  • 2 teaspoons agave (or honey)
  • ½ teaspoon sesame oil
  • 1 ½ teaspoons Aleppo pepper
  • 2 teaspoons corn starch
  • 2 tablespoons grapeseed oil (Divided. Or other neutral oil, such as avocado or canola)
  • 8 ounces ground turkey (or beef or plant-based burger)
  • 4 scallions (thinly sliced, approximately ½ cup. Divided)
  • 8 ounces firm tofu (crumbled. Approximately 1 ½ cups)
  • 12 ounces asparagus (trimmed and sliced into ½" slices)
  • 1 red pepper (seeded and sliced)
  • 1 tablespoon fresh ginger (peeled and grated)
  • cup unsalted peanuts (roasted )
  • ¼ teaspoon Tabasco (or other hot sauce. Optional)
  • salt

Instructions

  • In a small bowl, combine oyster sauce, water, tamari, vinegar, agave, sesame oil, and Aleppo pepper. whisk in the cornstarch until smooth. set aside
  • Heat a 12” skillet or wok over a medium-high heat. When it’s heated, add 1 tablespoon of the oil, and then add the ground meat. beef and ¼ cup of the scallions. Sprinkle with salt and pepper, and cook, stirring and breaking up the meat, until browned, about 3 minutes. set the meat aside in a bowl
  • In the same skillet, add the remaining tablespoon of oil, and then the tofu. Season with salt and pepper and cook, stirring occasionally, until the tofu is dry and golden, about 5 minutes
  • Add the asparagus, red pepper, garlic and ginger and cook, stirring occasionally, until asparagus is crisp-tender, about 2 minutes. Add the meat (and any accumulated juices) and oyster sauce mixture. Stir until everything is warmed through, about 1 minute. Mix in the remaining ¼ cup scallions and peanuts
  • Adjust the seasoning with salt, pepper, and hot sauce
  • Serve with rice, and hot sauce on the side, if using
