Aunt Ruth's Sautéed Peaches with Bread and Butter
This is a classic budget friendly dessert that's great with bread and butter or ice cream! Even if your peaches aren't as ripe as you'd like, cooking them will make them perfect!

Ingredients
- 5 peaches (peeled and sliced into ½-inch-thick wedges (about 6 cups). Peeling is optional. See peeling notes below)
- zest of one orange
- 2 tablespoons fresh orange juice
- ¼ teaspoon ground cinnamon
- â…› teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 teaspoon vanilla
- 2 tablespoons butter (or 2 tablespoons neutral oil, such as safflower, grapeseed, or canola oil)
Instructions
- In a large bowl, combine the sliced peaches, orange juice, zest, cinnamon, nutmeg, and salt in a medium bowlÂ
- Heat the butter or oil in a large skillet over medium heat. Stir in the peach mixture. Cook, stirring occasionally, until softened, about 6 minutes.  Remove peach mixture from heat, and let it stand for 5 minutes. Serve warm with Bread & Butter, or with your favorite ice cream
Notes
To Peel the Peaches
- In a large saucepan, bring 5 cups water to boil. Set a large bowl of ice water nearby. Score the bottom side of each peach with an X.
- Place peaches in the large pot of boiling water for 10-20 seconds or until the skin splits
- Remove with a slotted spoon and immediately place them in the ice water bath stop the cooking process
- Use a paring knife to peel the skin, which should easily peel off
- Hold the peach in your hand and, using a paring knife, make a cut down to the pit.
- Then make another cut parallel to the first cut (about ½-inch over or desired thickness), also to the pit.
- Flick the blade of your knife in the direction of the first slice, the segment will come away easily. Repeat with remaining fruit
- Discard/compost the pits, or bury them outside to start a peach tree, although growing a tree will take a while
