Baked Chicken Cordon Bleu
A tasty and healthier variation on the deep-fried classic! It's perfect with my Fast Pear Chutney.

Equipment

- Parchment paper

Ingredients
- 4 chicken breast halves (boneless, skinless)
- 2 eggs
- 4 oz Swiss cheese (or Gruyere, 2-4 slices, or other favorite cheese)
- 4 oz deli ham (2-4 slices)
- 4 oz bread crumbs (plain, unseasoned. Fresh or store bought. Gluten free breadcrumbs can be substituted)
- salt

Instructions
- Heat the oven to 350°. Line a sheet pan with parchment paper, and set aside 8-12 toothpicks
- Beat the eggs, and add the olive oil and a sprinkle of salt and pepper. Set this aside
- In a separate bowl or small sheet pan, add the bread crumbs and set aside
- Pound the chicken breasts until they’re approximately ½-inch thick. Or, slice them lengthwise, but not all the way through, so each piece opens like a book
- Place two breast halves on a flat surface, and cover with ham and cheese. Depending on their size, only one slice of ham and cheese may be needed
- Cover each piece with a chicken breast half. Cut in half, and skewer each piece with 2-3 toothpicks
- Dip each piece in the egg mixture, covering it completely. Then, place the chicken in the bread crumbs, and coat each piece entirely. Place on the sheet pan
- Bake for approximately 25 minutes, or until its temperature reaches 160°
Notes
Serve immediately, with pear chutney, or a honey mustard sauce Makes four servings
