Ingredients
- 3 bananas (very ripe (see note below))
- 2 tablespoons rum (or orange juice or water (optional see note below),)
- 2 eggs (well beaten)
- 2 cups flour
- ¾ cup sugar
- ½ teaspoon salt
- 2 teaspoons baking soda
- ½ cup chopped walnuts
Instructions
- Preheat oven to 350°. Grease a loaf pan
- In a large bowl, mash together the bananas and rum (if using), and mix them with the eggs
- Stir in the flour, sugar, salt, and baking soda. Add the walnuts and combine
- Pour mixture into the prepared pan, and bake for 45-60 minutes, or until cake tester, or toothpick comes out clean from the center
- Remove from the pan and cool
Notes
NOTE: The banana needs to be very mushy. If it’s still at all firm, mash it in a bowl, with a fork or your hands. If it’s still a bit firm, add in the rum, orange juice, or water until it is mushy
