Banana Bread with Nuts

Ingredients

  • 3 bananas (very ripe (see note below))
  • 2 tablespoons rum (or orange juice or water (optional see note below),)
  • 2 eggs (well beaten)
  • 2 cups flour
  • ¾ cup sugar
  • ½ teaspoon salt
  • 2 teaspoons baking soda
  • ½ cup chopped walnuts

Instructions

  • Preheat oven to 350°.  Grease a loaf pan
  • In a large bowl, mash together the bananas and rum (if using), and mix them with the eggs 
  • Stir in the flour, sugar, salt, and baking soda.  Add the walnuts and combine
  • Pour mixture into the prepared pan, and bake for 45-60 minutes, or until cake tester, or toothpick comes out clean from the center
  • Remove from the pan and cool

Notes

NOTE: The banana needs to be very mushy. If it’s still at all firm, mash it in a bowl, with a fork or your hands. If it’s still a bit firm, add in the rum, orange juice, or water until it is mushy
