Blueberry Clafoutis
This classic French dessert has been described as cross between a flan and a pancake. Ironically, it's even easier to make than either of these. But it's the flavor that makes this a great dessert.

Ingredients

  • cups milk
  • ½ cup sugar
  • 3 eggs
  • 1 tablespoon vanilla
  • teaspoon salt (a pinch)
  • ½ cup flour
  • 2 cups blueberries (if using frozen, do not thaw)

Instructions

  • Preheat the oven to 350º. Butter or spray a 9” pie plate and set aside
  • In a blender, add the milk, sugar, eggs, vanilla, salt and flour. Blend at high speed for one minute, until the batter is smooth and frothy
  • Pour the batter into the prepared pie plate. Evenly spread the blueberries into the batter. Place in the oven, and bake for about 35-45 minutes. The clafoutis is done when it’s puffed and brown, and a knife pierced into the center comes out clean
  • Serve with ice cream, whipped cream, or sprinkling of confectioners sugar Can be served warm, at room temperature, or cold
