Brussels Sprouts with Parmesan
With just a few ingredients, this is a great way to spruce up your sprouts!

Ingredients

  • 1 pound brussels sprouts (rinsed, stem-end trimmed, and sliced in half )
  • 2 tablespoons olive oil
  • ½ cup Parmesan cheese (grated)
  • salt
  • pepper

Instructions

  • Preheat the oven to 400˚F. Place a sheet of parchment paper on a sheet pan, plus an extra piece of parchment
  • Place the Brussels on the single sheet of parchment on the sheet pan. Combine with the olive oil, and sprinkle with salt and pepper
  • Cover with the second sheet of parchment, and roast for 10-15 minutes, stirring halfway through cook time, until fork tender
  • Remove from the oven, and let them cool until they can be easily tossed with your hands. You can do this one day ahead
  • Method 1: On the same sheet pan, spread all of the parmesan cheese. Place the Brussels cut-side down onto the parmesan, and return to the oven. Bake for 12-15 minutes, or until the cheese is golden brown. Serve immediately
  • Method 2: On the same sheet pan, spread approximately 1-2 heaping teaspoons of parmesan around the pan. More may be needed. Place the Brussels cut-side down onto the parmesan, and return to the oven. Bake for 12-15 minutes, or until the cheese is golden brown. Serve immediately

Notes

Note: Method #2 makes a slightly nice presentation, but both ways taste great!
