Chicken Meatballs with Tofu and Parmesan
This meatball is amazingly simple with a light texture not usually found in chicken or turkey meatballs.

Ingredients

  • 1 quart tomato sauce (see recipe link and note below)
  • ¾ cup firm tofu (crumbled, about 4 ounces)
  • ½ cup ricotta cheese (about 4 ounces)
  • ½ cup parmesan cheese (grated, about 1½ ounces)
  • ¼ cup plain breadcrumbs (Gluten Free crumbs work well too)
  • 1 egg
  • 2 garlic cloves (peeled and minced)
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pound ground chicken (ground turkey works well too)

Instructions

  • Preheat oven to 375°
  • While you prepare the meatballs, bring the tomato sauce to a simmer
  • In a large bowl, combine tofu, ricotta, Parmesan, bread crumbs, egg, garlic, oregano, salt pepper. Mix until well combined
  • Add the chicken and gently mix to incorporate
  • Lightly wet your hands to prevent meatball mixture from sticking, then roll into 1½-inch/golf ball-size rounds. You’ll have 25-30 meatballs
  • Add the meatballs to the tomato sauce, and stir, very gently, to coat the meatballs in the sauce. Bring to a boil and cover. Transfer to the oven to bake, until the meatballs are cooked through, 20 minutes
  • Serve with pasta

Notes

Note: If you don’t have tomato sauce, you can use this recipe, but will need to prepare it 45-60 minutes in advance. It's my go-to quick sauce.
