Chocolate Truffles
Of the three kinds of truffles, this is the simplest. It can just be chocolate, or add whatever flavors you'd like!

Ingredients
- 1 cup heavy cream (or whipping cream)
- 2 cups dark chocolates (chopped, or in small pieces,)
- 2 tablespoons Triple Sec (Frangelico, Kahlua, Cointreau, or other flavored liqueur. Optional)
- ¼ cup cocoa powder (or sifted confectioners sugar, or crushed nuts, for rolling. Optional)
Instructions
- Set aside a sheet pan with waxed or parchment paper
- In a saucepan, over a medium heat, scald the cream
- Place the chocolate in a heatproof mixing bowl. Pour the hot cream over the chocolate and let it sit for about 30 seconds, to melt chocolate slightly.
- With a whisk, slowly mix the cream and chocolate, until just combinedÂ
- Add liqueur until just incorporated. Let the mixture sit at room temperature for at least 1 hour. You can also chill this in the refrigerator, but make sure it can still be rolled with a spoon or a scoop
- When the mixture is firm, use a teaspoon to scoop and begin to shape the chocolate. Roll the truffles with the palms of your hands to create a round ballÂ
- Roll the truffles in cocoa powder, confectioners' sugar or finely chopped nuts to finish. Place on the sheet pan with waxed or parchment paper

Notes:
- You can add all kinds of flavors, including hazelnut, peppermint, plain, etc.
- You can also roll these in nuts, confectioners sugar, etc.
- Since this can be messy, you might want to wear latex gloves while rolling the truffles
- Hazelnut: add 1 tablespoon of hazelnut liqueur and ½ cup of finely chopped hazelnuts
