Dairy Free No Churn Blueberry Ice Cream
This dairy free favorite doesn't need an ice cream maker...just an electric mixer and your favorite mix-ins, to make this great dessert!

Ingredients
- 13.5 ounces coconut cream (1 can)
- 1 cup blueberries (fresh or frozen)
- ¼ cup sugar
- 1 teaspoon lemon juice
- 11 ¼ ounces non-dairy sweetened evaporated milk (1 can)
- 1 teaspoon vanilla extract
- â…› teaspoon salt (a pinch)
Instructions
- Set aside a loaf pan, or any other container that is freezer safe
- Place the can of coconut cream in the refrigerator overnight, or at least for eight hours. Place the blueberries, sugar, and lemon juice into a small saucepan, and bring to a simmer over a medium-high heat. When it comes to a simmer, reduce the heat to low, and simmer for 5 minutes, until the sugar dissolves and there’s liquid in the pan. Remove from heat, and cool to room temperature
- In a large bowl, stir together the cooled blueberries and condensed milk. Set this aside
- Drain any excess liquid from the coconut cream. If some liquid remains, that's okay. In a separate large bowl, with an electric mixer (you can use a whisk, but your arm may fall off), whip the coconut cream on medium-high speed until stiff peaks form, about 5 minutes. If the peaks don’t form, but it’s just thickened, that’s will work too
- Fold about ½ cup of the whipped cream into the blueberry mixture with a rubber spatula, until it’s combined. Fold the remaining whipped coconut cream into the blueberry mixture until it’s thoroughly combined
- Pour into the loaf pan, and freeze, covered with parchment or wax paper, for 4-5 hours, until frozen through

You can change, use and add any flavors that you'd like, such as chocolate, other fruit, nuts, etc. You can add up to one cup of these add-ins
