Fast Pear Chutney
This is a great way to make your meat and seafood dishes a bit zippier. And it's perfect when pears are fresh in the fall.

Ingredients

  • ½ cup sugar
  • 6 tablespoons cider vinegar
  • 2 pears (peeled, cored, and diced)
  • 1 shallot (peeled and minced)
  • ¼ cup raisins
  • 1 tablespoon crystalized ginger (finely chopped)
  • 2 cloves (optional)

Instructions

  • Combine sugar and vinegar in large saucepan, bring to a boil, stirring until sugar dissolves
  • Add remaining ingredients and simmer, uncovered, until slightly thickened, and the pears are cooked through. Stir occasionally while cooking
  • Remove the cloves, and serve warm or at room temperature
