Flourless Chocolate Orange Cake
This classic cake, originally from from Gourmet Magazine, Is perfect as a simple, single layer of perfection, or as part of a multi-layer showstopper. And it's gluten free, too!

Ingredients
- 6 ounces chocolate chips (or dark chocolate chopped into small pieces)
- 8 tablespoons unsalted butter (1 stick; cut into pieces)
- ½ cup unsweetened cocoa powder (sifted)
- 1 orange (zest only)
- ¾ cup sugar
- 1 teaspoon espresso powder (optional)
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- 3 large eggs
- confectioner's sugar (optional. For dusting the top before serving)
Instructions
- Preheat oven to 375°F and butter an 8 or 9-inch round cake pan. Line the bottom with parchment or wax paper
- Place the chocolate and butter into a medium-sized stainless steel bowl. Place this over the top of a saucepan that has 1-2 inches of water in it. Bring the water to a low boil, and gently simmer until the chocolate and butter melt. Whisk this together until thoroughly combined. Be careful, as the bowl will be hot
- While the chocolate mixture is melting: in a bowl, whisk together the coca powder and orange zest. Set this aside
- After the melted chocolate and butter have been combined, remove from the heat, and whisk in the sugar, espresso powder, salt, and vanilla. Add the eggs, and whisk until the mixture is smoothÂ
- Whisk the cocoa and orange mixture into the batter, and pour into the prepared pan. Bake for 25 minutes, or until top has formed a thin crust, and a cake tester comes out clean
- Cool cake in pan on a rack for 5 minutes, then invert onto a cooling rack
