Fresh Grape Tomato Sauce
This is truly a summer sauce, when fresh tomatoes seem to be everywhere. This is fast cooking, fresh tasting, and gluten free!

Ingredients

  • 2 garlic cloves (peeled and minced)
  • 2 tablespoons olive oil
  • 1 quart grape tomatoes (approximately 1 ½ pounds, sliced in half lengthwise. See slicing note below)
  • 2 tablespoons tomato paste (optional)
  • ¼ cup water (this may not be needed. You can use pasta water too)
  • 8 leaves fresh basil leaves (thinly sliced)
  • salt
  • pepper
  • ½ teaspoon Aleppo pepper (or â…™ teaspoon crushed red pepper flakes)

Instructions

  • Heat a large saucepan over a medium heat. When it’s hot, add the olive oil, and then the garlic.  Sautee for 20-30 seconds, or until the garlic becomes fragrant
  • Add the tomatoes and bring to a simmer. Add the tomato paste, and sprinkle with salt and pepper. Reduce the heat, and simmer, covered, for 6-10 minutes, or until the tomatoes start to become mushy. If you find that the tomatoes’ liquid has evaporated, add the water
  • Add the basil, and simmer for another 5 minutes
  • Adjust the flavor with salt and pepper (or Aleppo pepper)
  • Serve over pasta

Notes

To slice the tomatoes:
  • Get two identical deli-container lids, or other plastic, but identical, lids
  • With one lid right-side up, place one layer of tomatoes on their sides on the lid. Place the other lid over the tomatoes, upside down
  • There will be a gap between the two inverted lids. Carefully, with your non-knife hand resting on the top lid, slice between the two lids with a chef’s knife, or other long knife, cutting all of the tomatoes in half
