Gluten Free Apple Crisp

Ingredients

  • 6 apples (golden delicious, honeycrisp, or other firm, large baking apples. Peeled, cored, and cut into wedges)
  • ½ cup sugar
  • teaspoon salt
  • 1 tablespoon tapioca (small tapioca pearls. Or substitute 1 tablespoon cornstarch)
  • ½ teaspoon ground cinnamon
  • teaspoon nutmeg
  • 3 tablespoons unsalted butter (keep the butter cold until you use it)
  • ½ cup brown sugar
  • ¾ cup oats (use gluten free oats, and grind them in a food processor or blender)

Instructions

  • Preheat the oven to 350°F  
  • In a bowl, combine the apples, sugar, salt, tapioca, cinnamon, and nutmeg, and place into an 8”x8” baking dish
  • In a separate bowl, with your hands, or a pastry cutter, combine the butter, brown sugar, and ground oats, until the butter is the size of small peas. Sprinkle this over the apple mixture
  • Bake for 30-45 minutes, or until the apples are cooked through, and the mixture is bubbling
  • Serve warm or at room temperature, with vanilla ice cream, whipped cream, or a wedge of cheddar cheese

Notes

NOTES:
  • The wider you cut the apples, the longer this will take to bake. It may take up to 10-15 minutes longer
  • If you're concerned that the apples may start to brown after you peel and cut them, but before you add in the remaining ingredients, just place them in a bowl. Cover them with water, and mix in the juice of one lemon
