Ingredients

  • ¼ cup sugar
  • â…› teaspoon salt (a pinch)
  • 1 tablespoon tapioca (small tapioca pearls. Or substitute 1 tablespoon cornstarch)
  • ½ teaspoon ground cinnamon
  • â…› teaspoon nutmeg (a pinch)
  • 6 apples (approximately 2 ½ - 3 pounds, (golden delicious, or other firm, large baking apples), peeled, cored, and cut into wedges (see note below))
  • 2 tablespoons unsalted butter (keep the butter cold until you use it)
  • ¼ cup brown sugar
  • ¾ cup gluten free oats (ground in a food processor or blender)

Instructions

  • Preheat the oven to 350°F. Set aside an 8" x 8" baking dish or 9" pie plate
  • In a small bowl, whisk together the sugar, salt, tapioca, cinnamon, and nutmeg, and set this aside
  • Place the apples in a large bowl, and thoroughly combine them with the sugar mixture. Place this in the 8x8 pan, or pie plate
  • In a separate bowl, with your hands, or a pastry cutter, combine the butter, brown sugar, and ground oats, until the butter is the size of small peas. Sprinkle this over the apple mixture
  • Bake for 30-45 minutes, or until the apples are cooked through, and the mixture is bubbling
  • Serve warm or at room temperature, with vanilla ice cream, whipped cream, or a wedge of cheddar cheese

Notes

NOTES:
  • The wider you cut the apples, the longer this will take to bake. It may take up to 10-15 minutes longer
  • If you're concerned that the apples may start to brown after you peel and cut them, but before you add in the remaining ingredients, just place them in a bowl, and cover them with water, and mix in the juice of one lemon
