Gluten Free Blueberry Clafoutis
This classic French dessert has been described as cross between a flan and a pancake. Ironically, it's even easier to make than either of these. But it's the flavor that makes this a great dessert.

Ingredients
- 1¼ cups milk
- ½ cup sugar
- 3 eggs
- 1 tablespoon vanilla
- ⅛ teaspoon salt (a pinch)
- ½ cup gluten free baking flour
- 2 cups blueberries (if using frozen, do not thaw)
Instructions
- Preheat the oven to 350º. Butter or spray a 9” pie plate and set aside
- In a blender, add the milk, sugar, eggs, vanilla, salt and gluten free baking flour. Blend at high speed for one minute, until the batter is smooth and frothy
- Pour the batter into the prepared pie plate. Evenly spread the blueberries into the batter. Place in the oven, and bake for about 35-45 minutes. The clafoutis is done when it’s puffed and brown, and a knife pierced into the center comes out clean.
- Remove from the oven, and evenly spread the blueberries over the batter. Sprinkle on the remaining 1/3 cup of sugar. Pour on the rest of the batter
