Ingredients
- 6 oz semisweet chocolate (chocolate chips work well)
- ¼ cup chocolate syrup
- 8 tablespoons unsalted butter ((1 stick), cut into pieces, at room temperature )
- 3 eggs (slightly beaten)
- 1 teaspoon vanilla extract
- ¾ cup sugar
- ⅛ teaspoon salt
- 2 ⅛ ounces gluten free baking flour (65 grams)
- ¼ teaspoon xanthan gum (include only if it's not already in the GF flour)
- 1 cup chopped walnuts ((optional))
Instructions
- Preheat oven to 350°. Butter (or spray) and flour an 8-inch square baking pan
- Melt the chocolate (see melting note below), then add the butter. Stir well. Remove the pan from the heat, and stir in the syrup until the mixture is smooth. Stir in the vanilla and eggs, and combine thoroughly
- In a separate mixing bowl, sift or whisk together the sugar, salt, gluten free flour, and xanthan gum (if using). Add this to the chocolate mixture and blend thoroughly. Stir in the (optional) walnuts
- Pour the batter into the pan, and bake until just cooked, approximately 30 minutes. When you test it with a toothpick or cake tester, it’s okay to have the toothpick come out a bit moist
- After the brownies have cooled for 5 minutes, cut them to your desired size
Notes
To melt the chocolate & other notes:
- Place the chocolate into a stainless steel bowl, and place this over a saucepan with 2” of water in it. Bring the water to a simmer to melt the chocolate
- Do not melt the chocolate in a saucepan directly over the heat. This is very hard to control, and usually leads to burned chocolate
- It’s best to cut the brownies, while still warm, with a serrated knife (disposable plastic knives actually work quite well). If you wait until the brownies have completely cooled, the top crust will crumble
