Gluten Free Chicken with Asparagus
This dish has a bit of heat and a bit of sweet. It can be also changed by adding whatever seasonings you'd like, from Asian to Mediterranean to TexMex! Swap the chili powder with...whatever you feel like having. And, it's gluten free!

Ingredients

  • 3 tablespoons honey
  • 2 tablespoons gluten free flour
  • 2 teaspoons chili powder
  • 1 ½ pounds boneless skinless chicken thigh
  • 1 tablespoon grape seed oil (or any high heat oil, such as avocado or canola oil )
  • 1 ¼ pounds asparagus (the weight of an asparagus bundle can vary. If it's a bit higher or lower, that's fine. Trim off the stalky end, and cut into 1-inch pieces)
  • 1 teaspoon rice vinegar
  • salt
  • pepper

Instructions

  • In a small bowl, stir together ¼ cup water with the honey, and sprinkle with salt and pepper. Set this aside
  • In a large bowl, whisk together the flour, chili powder, and sprinkle with salt. Add the chicken and toss until coated
  • Place a large skillet over a medium-high heat. When it’s heated, add the oil, then the chicken. Cook until the chicken is golden brown on both sides, 2 to 3 minutes per side
  • Mix in the asparagus, and cook until it starts to become tender when pierced with a paring knife, 1 to 2 minutes
  • Add the honey mixture and cook, stirring, until the chicken is cooked through and the sauce has thickened, 2 to 3 minutes
  • Remove from the heat and stir in the vinegar. Season to taste with salt and pepper
