Gluten Free Chocolate Chip Cookies
This cookie is naturally gluten free, without flour substitutions, as it's made with almond flour. It's just as tasty and chewy as you'd expect from this classic!

Ingredients

  • 2 ¾ cups almond flour (310 grams)
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 10 tablespoons butter (140 grams/1¼ sticks)
  • ½ cup brown sugar
  • ½ cup sugar
  • egg
  • 1 ½ teaspoon vanilla extract
  • 12 ounces chocolate chips (340 grams)

Instructions

  • Heat the oven to 350º.  Line two baking sheet pans with parchment paper
  • In a medium bowl, whisk the almond flour, salt and baking soda to combine. Set this aside
  • Using a mixer fitted with the paddle attachment, cream the butter, brown sugar and granulated sugar on medium speed, until very light in texture, and smooth, approximately 2-3 minutes
  • Add the egg and mix on medium speed to combine. Scrape the bowl well, then mix in the vanilla 
  • Add the almond flour mixture, and mix until just combined. Scrape the bowl well and mix on low speed to ensure the mixture is completely blended in
  • Add the chocolate chips, and mix on the lowest speed to combine
  • Scoop the dough into ping pong-sized balls, weighing approximately 30 grams (see note below)
  • Drop them onto the prepared cookie sheets, leaving approximately 2 inches between them. You’ll be able to fit 12 cookies on each pan.  Gently press the cookies down slightly with your fingers until they’re about 1½ inches thick
  • Bake the cookies, until they’re golden brown around the edges and just barely set in the center, 10-12 minutes. Transfer the sheet pans to a cooling rack for 5 minutes, then transfer the cookies onto cooling racks to cool to room temperature
  • Yield: 33-36 cookies

Notes

NOTE: If you’re using a convection oven, bake the cookies at 325º, until they’re golden brown around the edges and just barely set in the center. With a convection oven, you can bake 2-3 trays of cookies at once. For maximum efficiency, if you’re using a non-convection oven, it’s best to bake the cookies one tray at a time
