Gluten Free Crustless Zucchini Pie
This is a great centerpiece for a brunch or light dinner. It has the texture of a quiche with the ease of, well, not making a quiche. And it's gluten Free! Try it. You'll love it too!

Ingredients

  • 10 oz zucchini (shredded)
  • 2 â…› ounces gluten free flour
  • 1 teaspoon baking powder
  • ½ cup shallots (peeled and minced)
  • 2 tablespoons chives (finely sliced)
  • 3 ounces feta cheese (½ cup. Crumbled)
  • â…” cup milk
  • 3 eggs
  • 1 teaspoon olive oil
  • ¼ cup Parmesan cheese (grated)
  • salt
  • pepper

Instructions

  • Preheat oven to 400°. spray or butter a pie plate, and set this aside 
  • Combine the zucchini with 1 teaspoon of the salt, and let it sit in a colander for at least 10 minutes. Then, squeeze out the remaining water from the zucchini, and discard the water
  • While the zucchini is salting, whisk the flour and baking powder together in a bowl, and set this aside
  • Combine the zucchini, shallots, chives, and feta cheese in a bowl
  • Combine this with the zucchini mixture and add the milk, eggs and olive oil. Sprinkle with salt and pepper
  • Place the mixture into the pie plate, and sprinkle the parmesan cheese over the top.  Bake for 25 minutes, or until a knife comes out clean when inserted into the center.
  • Let it stand for at least 5 minutes before serving. This can also be served warm or cold
