Gluten Free Lion's Mane "Crab" Cakes
This vegetarian (and gluten free) version of the classic crab cake is fantastic. With a terrific flavor and texture, this is perfect as an appetizer or main course!

Ingredients
- 1 pound Lion's mane mushrooms
- 2 tablespoons water
- ½ cup gluten free bread crumbs
- 2 large eggs, slightly beaten
- 2 scallions, finely chopped
- 1 ½ tablespoons mustard
- 7 dashes Tabasco (or other hot sauce)
- 8 dashes Worcestershire Sauce (vegetarian Worcestershire, if you'd prefer)
- ¾ cup cornmeal
- 1 tablespoon olive oil
- salt
- pepper
Instructions
- With your fingers, shred the lion’s mane mushrooms into pieces, until it resembles crab meat. Put these into a saucepan with the water and ½ teaspoon of salt. Bring to a simmer, stir, and cover. Reduce the heat to low, and cook for 2-3 minutes, until the mushrooms are wilted and have given up their liquid (they’ll be much softer that when you shredded them)
- Allow the mushrooms to cool, then squeeze out as much water as you can
- In a bowl, combine the mushrooms, bread crumbs, eggs, scallions, mustard, Tabasco, and Worcestershire sauce. Refrigerate, covered, for one hour. You can also do this up to 24 hours ahead
- Shape the mixture into 4 round pattiesÂ
- Place the cornmeal in a bowl, and roll the patties in it
- Heat a large skillet over a medium heat. When it’s heated, add the olive oil.  Sauté the crab cakes until golden colored, approximately 4-5 minutes per side
Notes
Makes approximately 8 cakes, or 12-15 mini-cakes
Serve with remoulade sauce
