Ingredients

  • 1 pound raisins (see note below)
  • 11 ounces porter (gluten free, or gluten free stout)
  • 17 ounces gluten free flour
  • ½ teaspoon xanthan gum (use only if not included in gluten free flour)
  • 7 teaspoons baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground allspice
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • teaspoon ground nutmeg
  • ½ teaspoon salt
  • 8 ounces unsalted butter (cold, cut into small pieces)
  • 8 ounces brown sugar
  • 1 orange (zest only)
  • 2 eggs (lightly beaten)

Instructions

  • Preheat the oven to 350°. Butter or spray a 9” springform pan, and line the bottom with parchment or wax paper
  • Place the raisins in a bowl, stir in the Porter (or stout) and set aside for 30-60 minutes
  • Place all the dry ingredients into a food processor and give them a few spins to combine them. Process in the butter until there’s a breadcrumb consistency. Process in the brown sugar and orange zest, until combined
  • Place the flour and sugar mixture in a large bowl. With a wooden spoon, mix in the eggs and porter/raisin mixture. Mix until thoroughly combined. You should have a wet mixture. If it’s a bit dry, add a bit more porter. It should be quite moist, but not runny
  • Pour the batter into the pan, smooth the top, and bake for 60 minutes, or until a cake tester comes out clean. While baking, if the cake is getting too dark, cover with a piece of parchment paper to prevent burning
  • Remove from the oven and place on a cooling rack for 10 minutes. Remove the cake from the pan
  • This usually tastes better after a day or two as the flavors develop. At Eilish’s suggestion, this is best served sliced thickly with lashings of butter and a big mug of tea

Notes

Note: You can use just raisins, other dried fruit, or a combination of dried fruit, including dried cherries or cranberries
