Ingredients

  • 4 ¾ ounces gluten free flour
  • ½ teaspoon xanthan gum (use only if this is not already included in the flour)
  • ¼ teaspoon salt
  • 1 cup water
  • 8 tablespoons unsalted butter ((1 stick), cut into small pieces)
  • 4 eggs

Instructions

  • Preheat the oven to 400°, and set aside a sheet pan lined with parchment paper. You’ll need a pastry bag with a ½” pastry tip, or see the note below
  • In a small bowl, whisk together the flour, xanthan gum (if using) and salt, and set aside
  • Place the water and butter in a medium saucepan and bring to a boil. Add the flour mixture and beat with a wooden spoon, until the dough is smooth, pulls away from the sides of the pan, and begins to form a ball. This will take less than one minute
  • Lower the heat to low, and gently stir for one minute 
  • Remove the pan from the heat, and let the dough sit for another minute. 
  • Stir in the eggs one at a time, until smooth and glossy
  • Place the dough in a pastry bag. Pipe the dough into approximately 1 ½” mounds on the baking sheet. 
  • Bake for 10-15 minutes, or until the puffs are a deep golden brown. This may take longer, depending on the size of the puffs
  • Cool on a cooling rack, and serve filled with ice cream, pastry cream, or whipped cream, and cover with hot fudge, or other favorite sauce

Notes

Note: If you don’t have a pastry bag, use a Ziploc or other sturdy plastic bag, with a ½” hole cut in a corner, and use this to drop the dough onto the prepared pan. If you don’t have a plastic bag, you can use a spoon to drop the dough onto the pan
