Scallion Pancakes
This gluten free version of the classic is as good as the original. Really!

Ingredients
- 2 cups gluten free flour (extra for dusting)
- 1 teaspoon salt
- 1 cup boiling water
- ½ cup vegetable oil (divided. Such as grapeseed, avocado, or canola)
- 2 tablespoons sesame oil
- ½ cup scallions sliced
Instructions
- Place the gluten free flour in a bowl, and slowly pour in the boiling water while mixing with a wooden spoon. You can also do this with a food processor. Place the dough on a lightly floured surface, and knead it until a smooth and slightly tacky ball forms, approximately 3 to 4 minutes. Let the dough relax in a bowl for about 30 minutes, and cover with a damp cloth or plastic wrap. Or, you can do this ahead of time, and keep it in the refrigerator, covered with plastic wrap, for up to 12 hours
- In a small bowl, combine ¼ cup of vegetable oil and the sesame oil. Set this aside
- Separate the dough into four equally sized balls. Return three to the bowl, and cover with the damp cloth or plastic wrap. On a floured surface, roll out the dough, with a rolling pin, into a thin rectangle. Brush on enough of the oil mixture in a thin layer. Carefully roll the dough up, along its longest edge. Take each end, and carefully twist the dough three times. Roll this up into a spiral (like a cinnamon bun). Again, on the floured surface, roll out the dough into a thin rectangle. Again, brush on enough of the oil mixture for a thin layer
- Spread 2 tablespoons of scallions over the dough, and roll this up into a spiral. Again, with a rolling pin, roll out the dough into a pancake, approximately 5-6 inches across
- Place a 7” or 8” skillet over a medium to medium-high heat. When it’s hot, add approximately 2 tablespoons of oil, and place the pancake in the skillet. Sear both sides of the pancake, approximately 3-4 minutes per side
- While the pancake is cooking, combine the ingredients for the dipping sauce
- When the pancake is done, cut it into wedges, and serve immediately with the dipping sauce
