Ground Turkey and Apricots for Hummus Entrée

2 tablespoons olive oil

1 onion, peeled and minced

1 red pepper, cored and minced

1 pound ground turkey (dark meat is tastier and moister)

¼ teaspoon cardamom

¼ teaspoon chili powder

½ cup of peas, fresh or frozen

½ cup chopped dried apricots or figs

¼ cup toasted pine nuts or chopped walnuts



  1. Heat a large skillet over a medium heat. When it’s heated, add the olive oil, then the onion and red pepper. Sautee for 5 minutes, until the vegetables are starting to cook through
  2. Increase the heat to medium high, and add the ground turkey. Add the cardamom, chili powder, and pinches of salt and pepper
  3. When the turkey is cooked through, reduce the heat to medium, and mix in the peas, apricots, and pine nuts. Adjust the flavoring as needed. Serve warm or room temperature

Serve over hummus, with pita bread

Makes 3-4 servings
