Ingredients
- 1 ½ pounds Steak (1 ¼ to 1 ½ inch-thick steaks (boneless rib eye, sirloin, top sirloin, etc.) )
- 2 teaspoons Vegetable oil (olive, grapeseed, avocado, etc.)
- 1 teaspoon salt
- 1 teaspoon black pepper (coarsely ground, if you have it)
Instructions
- Remove the steaks from the refrigerator 20-30 minutes before you want to cook them. Let them sit, covered, at room temperature
- If you’re using a gas grill, heat it to high, but leave one of the burners on low
- If you’re using a charcoal grill, light a hot fire. When you spread the coals, make sure there’s a slightly cooler side of the grill. A hot fire means you should be able to hold your hand over the grill for no more than three seconds
- Brush the steaks on both sides with a very thin coating of oil, and season generously with salt and pepper
- Place the steaks on the grill, and cook until a crust forms, and they’re slightly charred, for 3-5 minutes.
- Turn the steaks over, and continue to grill 3 to 5 minutes, or until cooked to your liking (see temperature ranges below)
- Remove the steaks from the fire, and place them on a cutting board or platter. Loosely cover with aluminum foil, and let them rest for 5 minutes before slicing or serving whole
