Ingredients

  • 1 cup jasmine rice (or other rice)
  • 2 cups vegetable stock (or chicken stock or water)
  • 2 teaspoons ginger (peeled and minced)
  • 2 lemons (zest only)
  • salt
  • pepper

Instructions

  • Add the rice, stock, ginger, and lemon zest to a saucepan. Cover, bring to a boil over a high heat. Lower the heat to low, and simmer for 17-20 minutes, or until the rice is cooked to your liking
