Ingredients
- ¼ cup olive oil
- ⅓ cup red wine
- ¼ cup tamari (or soy sauce)
- 1 lemon zest
- 2 tablespoons lemon juice
- 5 garlic cloves (peeled and smashed)
- 1 tablespoon mustard
- 2 tablespoons honey (or agave, plus extra for the sauce)
- ½ teaspoon black pepper
- ¼ teaspoon Tabasco sauce
- 2 pounds flank steak
- ½ cup beef stock (or chicken stock, or water)
Instructions
- Combine all of the ingredients, except the steak. Then add the steak, and marinate from two-six hours
- Before cooking, remove the steak from the marinade, and pat
- Place the marinade in a small saucepan, with the stock or water added, and over a high heat, bring to a light boil. Reduce the heat and bring to a simmer while the steak cooks. Before serving as a sauce with the steak, adjust the flavor as needed with salt, pepper, and agave. Strain the sauce, if you’d like. This is optional
- To cook: Grill, broil, or pan-fry (in a cast iron skillet, if possible) over a high heat for 4 minutes per side
- Serve with marinade sauce
Notes
NOTE: Flank steak is best served between rare and medium. If it’s well done, it’ll be very tough and chewy.
