Ingredients
- ¼ cup miso (light miso works well)
- ½ cup mirin
- 2 tablespoons sake (or white wine)
- 2 tablespoons tamari (or soy sauce. Low sodium versions work well too )
- 2 tablespoons agave (or honey or sugar)
- 1 tablespoon sesame oil
- 2 garlic cloves (peeled and minced)
- 2 teaspoons ginger (peeled and minced)
- 1 ½ pounds cod (haddock, or sea bass)
Instructions
- Heat the oven to 450°. Set aside a sheet pan (with sides), covered with parchment paper
- In a bowl, whisk together the miso, mirin, sake, agave, tamari, sesame oil, garlic and ginger
- While the oven is heating, place the fish skin-side up (if there is any skin) in the miso mixture
- When the oven is heated, place the fish skin-side down on the pan, and pour the miso mixture over the fish
- Bake until the fish is cooked to your liking, approximately 12-15 minutes
