Mushroom Banh Mi Sandwich
This plant-based version of this classic sandwich great tasting and filling. And with your choice of bread, can be gluten free too!

Ingredients

For Pickled Vegetables

  • â…“ cup distilled white vinegar
  • â…“ cup granulated sugar
  • ½ teaspoon kosher salt
  • 3 cups carrots (julienned strips, about 1/8 inch thick)

For the Mushrooms

  • 4 portabella mushrooms (approximately 6 inches. Cleaned and thinly sliced)
  • 8 oz shiitake mushrooms (caps only, cleaned and sliced)
  • ½ tablespoon olive oil
  • 1 ½ teaspoons five-spice
  • 1 teaspoon tamari (or soy sauce)
  • 3 tablespoons water
  • 1 teaspoon agave
  • ½ teaspoon sesame oil
  • salt

To Finish the Sandwiches:

  • 1 baguette (thin crusted, partially split lengthwise)
  • 2 tablespoons mayonnaise
  • 1 small cucumber (preferably kirby, cut into 1/8 inch thick julienne strips)
  • scallions (unsliced)
  • 6 leaves green leaf lettuce
  • Siracha Sauce (or other hot sauce)

Instructions

Make the pickled vegetables

  • Whisk the vinegar, sugar, and salt together until dissolved. Add the carrots and toss well
  • Marinate for at least 30 minutes, or up to one day. Drain the carrots well before putting them in the sandwich

To Cook the Mushrooms

  • Place a large skillet over a medium-high heat. When it’s heated, add the olive oil, mushrooms, five-spice and tamari. Cover, and cook for 2-3 minutes, stirring occasionally
  • After the 2-3 minutes, there should be some liquid in the pan. Stir in the water, agave, and sesame oil. Sprinkle with salt, and cover. Cook for another 1-2 minutes, or until the mushrooms are cooked through. They’ll still be firm. Remove them from the heat, place in a bowl, and set this aside

To Make the sandwiches

  • Spread the mayonnaise on the top half of the baguette
  • Spread the mushroom mixture, with it’s liquid, evenly in the baguette
  • Top the mushrooms with the well-drained pickled carrots, cucumber, scallions, lettuce, and a squirt of Sriracha
  • Cut the baguette into 6 sandwiches, and serve

Notes

This is enough to fill two baguettes
