Ingredients
- 2 tbsp vegetable oil
- 6 garlic cloves, peeled and minced
- 1 small onion, peeled and minced
- 1 16 oz jar all-natural peanut butter (no sugar added)
- 1 ½ cups chicken or vegetable stock
- 1 14 oz can coconut milk
- ¼ cup lemon juice
- ¼ cup soy sauce
- 2 tbsp honey or agave (or more, to taste)
- cayenne pepper or hot sauce, to taste
Instructions
- Heat a saucepan, over a medium heat. When it’s heated, add the oil, then add the onion. Sautee for five minutes, or until they start to cook through. Don’t let them get browned. Add the garlic, and sauté to 30 seconds.
- Add the remaining ingredients, except the honey and cayenne pepper, and bring to a simmer, stirring regularly. When the sauce has thickened, 5-10 minutes, adjust the seasoning with the cayenne pepper and honey
