Orange Chocolate Chip Cake
This single layer cake is a quick and perfect accompaniment to an afternoon tea or coffee, or for after dinner. Orange and chocolate...the perfect combo!

Ingredients
- 1 cup flour (8 ½ ounces)
- 1¼ teaspoons baking powder
- ½ teaspoon salt
- 3 ounces butter (¾ stick. Softened)
- ½ cup sugar
- 1 egg
- 1 orange (zest only)
- â…“ cup orange juice
- ¼ cup mini chocolate chips
Instructions
- Preheat the oven to 375°. Lightly spray or butter a 9-inch round cake pan, and cover the bottom with waxed or parchment paper
- Sift together the flour, baking powder, and salt.  Set aside
- In a mixing bowl, cream the butter, then add the sugar and beat until it’s light.  Beat in the eggs, one at a time.  Add in the orange zest
- Add in ½ of the flour mixture, and alternate with adding the orange juice. Spread the batter into the cake pan, and sprinkle the chocolate chips on top
- Bake for 20-25 minutes, or until cake tester comes out clean
- Remove from the oven, and cool on a cooling rack for 10 minutes. Carefully, between the side of the cake and the pan, move a short knife all the way around the pan.  Then, with another cooling rack, gently turn the cake over, so it’s upside down. You might have to firmly tap the bottom of the pan to have the cake drop onto the cooling rack. After it’s out of the pan, remove the wax paper from the bottom of the cake. Turn the cake back to right-side up, and cool completely

Sprinkle with confectioners sugar, if desired
