Ingredients
- 2 tbsp olive oil
- 1 large onion, peeled and sliced
- 4-6 portabella mushroom caps, cleaned thinly sliced
- salt and pepper to taste
- 4 slices American cheese singles (organic cheese tastes VERY good)
- 4 sub rolls
Instructions
- In a large skillet, over a medium heat, add the olive oil. Sauté the onion for 5-10 minutes, until it’s starting to cook through. You can even cook these on a low heat to caramelize them, for approximately 45-50 minutes. Season with a bit of salt and pepper.
- Add the mushrooms and cover. Sautee for five minutes, until mushrooms are cooked through. Season to taste with salt and pepper.
- Place cheese on top, and let it sit for a few moments, to begin melting. Then, stir the cheese into the mushrooms and onions.
- Serve immediately in rolls.
