No Churn Peach Ice Cream
Yes, a fantastic plant-based peach ice cream! It uses two types of coconut milks, and the results are wunderful. And no ice cream machines, either. Plus, as everyone knows, ice cram is great all year round!

Ingredients

  • 1 pound peaches (fresh, peeled and pitted. If using frozen, thaw first)
  • 7.5 ounces sweetened condensed coconut milk (1 can)
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 13.5 ounces coconut cream (refrigerated for at least 12 hours)

Instructions

  • Set aside a bread loaf pan, approximately 9” x 5” x 3”. If you don't have one, any container will work
  • Puree the peaches with a blender or food processor, and set aside
  • In a separate large bowl, whisk together the sweetened condensed coconut milk, vanilla, and salt. Mix in the peaches and set this aside
  • In a separate large bowl, with an electric mixer (you can use a whisk, but your arm may fall off), whip the coconut cream on medium-high speed until stiff peaks form, about 2 minutes
  • With a rubber spatula, fold in about 1 cup of the whipped coconut cream into the peach mixture until it’s combined. Fold in the remaining whipped coconut cream, until it’s thoroughly combined
  • Pour into the loaf pan, and freeze, covered with parchment or wax paper, for 6-8 hours, until frozen through
  • Remove the ice cream from the freezer about 5-10 minutes before serving, to soften it a bit
