Potato Dumplings
This is a variation on the classic German potato dumpling. It's a great addition to your favorite soup, especially chicken soup!

Ingredients
- 2 pounds potatoes (any kind you'd like)
- 2 eggs (beaten)
- 1 cup potato starch
- 2 tablespoons fresh parsley (or other fresh herbs, including chives, basil, or chopped thyme)
- salt

Instructions
- Peel the potatoes, and cut them into large chunks. Place them in a large pot, and add enough water to cover the potatoes. Cover the pot, and place over a high heat. Bring this to a boil, then reduce the heat to a simmer. Cook until the potatoes are tender, and can easily be pierced with a fork or paring knife, approximately 12-15 minutes. Drain the potatoes, and let them cool to room temperatureÂ
- Meanwhile, bring a large pot of water to a boil
- Separately, in a large bowl, mash the cooled potatoes (or use a ricer), and mix in the beaten egg, potato starch, and parsley. Sprinkle with salt and pepper
- With a scoop or spoon, make golf ball-sized dumplings, and place them on a sheet pan
- When the water has boiled, add at least one teaspoon of salt, and gently drop the dumplings into the pot
- Reduce the heat as needed, cover the pot, and simmer for 7-9 minutes, or until the dumplings have puffed up, and are heated through
- Remove with a slotted spoon, and serve with your favorite soup

- There are so many other ingredients and flavors you can add to these dumplings, including cheeses (such as Parmesan or gruyere), grated or sauteed onions, or spices such as allspice, Bell’s poultry seasoning, or smoked paprika
- This recipe makes approximately 30 dumplings, or 10 servings of three dumplings each, and pairs well with chicken soup!
