Pulled Chicken, Carolina Style
This is usually a pulled pork recipe. But with chicken, it's a faster, great tasting new dish!

Ingredients

  • 2 pounds chicken thighs boneless, skinless
  • ½ cup white vinegar
  • ½ cup cider vinegar
  • 1 tablespoon brown sugar
  • 1 ½ teaspoons crushed red pepper flakes
  • 1 ½ teaspoons Tabasco sauce
  • 1 tablespoon ketchup (optional)
  • salt
  • black pepper

Instructions

  • Preheat the oven to 350°
  • Place the chicken in a small roasting pan or baking dish, and cut a few slices across each of the chicken pieces, about ¼ inch deep. Sprinkle generously with salt and pepper, and set aside
  • In a bowl, whisk the remaining ingredients (sprinkling in salt and pepper), and mix until the sugar dissolves. Pour over the chicken, and bake in the oven for 35-45 minutes, or until the chicken is cooked through
  • Place the chicken on a cutting board, and shred it using two forks, or a cleaver, to shred the chicken
  • Combine any remaining sauce from the roasting pan and mix it into the shredded chicken
  • Serve on buns, with coleslaw, mashed potatoes or rice
