Roasted Broccolini with Pan Fried Capers

Ingredients

  • 1 pound broccolini (leaves (not florets) removed, and ends slightly trimmed )
  • ½ lemon (thinly sliced)
  • 3 tablespoons olive oil (divided. More may be needed)
  • ¼ cup capers
  • 2 ounces feta cheese
  • ¼ cup walnuts (chopped and toasted)
  • ¼ cup pomegranate seeds
  • salt
  • pepper

Instructions

  • Heat the oven to 425°. Set aside a sheet pan, lined with parchment paper
  • On the sheet pan, combine the broccolini and lemon slices and 2 tablespoons of oil. Sprinkle with salt and pepper, and evenly spread this on the pan. Roast for 12-15 minutes, or until the broccolini stems are just cooked through. Turn over the broccolni every 5 minutes  
  • While the broccolini is roasting, place a small skillet over a medium heat. When it’s heated, add the remaining tablespoon of olive oil to the pan. Add in the capers, and cook them for 5 minutes, stirring frequently, until they’re crispy. When they’re done, set them aside
  • When the broccolini is cooked and out of the oven, add in the fried capers, feta cheese, and walnuts. Garnish with pomegranate seeds before serving
