Roasted Cabbage Rounds

2-3 tablespoons olive oil
1 medium head green cabbage, stem removed, cut into 1” thick round slices
salt
pepper
Preheat the oven to 400°. Brush a rimmed sheet pan with 1 tablespoon olive oil, or line it with parchment paper
- Place the sliced cabbage in a single layer on the sheet pan, and brush with olive oil on both sides
- Sprinkle with salt and pepper, and roast until the cabbage is tender, and edges are golden, 30-40 minutes
Makes 4-6 servings
Note: You can also sprinkle with caraway or fennel seeds before roasting, or any other seasoning you’d like
