6-8 medium carrots, approximately 12 oz, peeled and sliced 1” thick
3 tablespoons olive oil
Preheat the oven to 400ºF.
- Place the carrot on a sheet pan with sides. Add the olive oil, and sprinkle with salt and pepper
- Roast in the oven for approximately 15-20 minutes, or until the carrots are cooked to your liking.
BIG NOTE: every 5-7 minutes, turn over the carrots to keep them from burning.
Serves 4-6 as a side dish
