Roasted Red Potatoes with Rosemary


2 pounds, new red potatoes, washed and cut into 1” pieces

2 tablespoons fresh rosemary (or 1 tablespoon dried).

¼ cup olive oil

1 teaspoon salt

½ teaspoon pepper


Preheat the oven to 400°.

  1. Place the potatoes onto a sheet pan with sides. Add in the remaining ingredients, and combine
  2. Roast in the oven for approximately 45 minutes, or until potatoes are cooked through and browned. NOTE:  Every 10-15 minutes, turn the potatoes over with a spatula, for even-cooking and to prevent potatoes from sticking to pan

Yield: approximately 6-8 servings


NOTE: if using dried rosemary, grind or chop it first, to get the most flavor from it
