Ingredients

  • 2 pounds red potatoes (washed and cut into 1" pieces)
  • 2 tablespoons fresh rosemary (or 1 tablespoon dried)
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Preheat the oven to 400°.
  • Place the potatoes onto a sheet pan with sides. Add in the remaining ingredients, and combine
  • Roast in the oven for approximately 45 minutes, or until potatoes are cooked through and browned. NOTE:  Every 10-15 minutes, turn the potatoes over with a spatula, for even-cooking and to prevent potatoes from sticking to pan

Notes

NOTE: if using dried rosemary, grind or chop it first, to get the most flavor from it
