Ingredients

  • 2 lbs new red potatoes, washed and cut into 1” pieces
  • 2 tbsp fresh rosemary (or 1 tablespoon dried)
  • ¼ cup olive oil
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  • Preheat the oven to 400°.
  • Place the potatoes onto a sheet pan with sides.  Add in the remaining ingredients, and combine
  • Roast in the oven for approximately 45 minutes, or until potatoes are cooked through and browned.  NOTE:  Every 10-15 minutes, turn the potatoes over with a spatula, for even cooking and to prevent potatoes from sticking to pan

Notes

Yield: approximately 6-8 servings
NOTE: if using dried rosemary, grind or chop it first, to get the most flavor from it
