Ingredients

  • 2 tablespoons vegetable oil
  • 6 garlic cloves (peeled and minced)
  • 1 small onion (peeled and minced)
  • 16 oz all natural peanut butter (no sugar added)
  • cups vegetable stock (or chicken stock)
  • 14 oz coconut milk
  • ¼ cup lemon juice
  • ¼ cup soy sauce
  • 2 tablespoons honey (or agave)
  • Cayenne Pepper (or Tabasco, to taste)

Instructions

  • Heat a saucepan, over a medium heat. When it’s heated, add the oil, then add the onion. Sautee for five minutes, or until the onions start to cook through. Don’t let it get browned. Add the garlic, and sauté for 30 seconds, or until it’s fragrant
  • Add the remaining ingredients, except the honey and cayenne pepper, and bring to a simmer, stirring regularly. When the sauce has thickened, 5-10 minutes, adjust the seasoning with the cayenne pepper and honey
