Roman Chicken
This simple dish has an earthy, almost salty flavor. The potatoes make this an almost-one pot dinner. And it's fast to cook, too. It's ready less than 40 minutes after you preheat the pan!

Ingredients
- 3 tablespoons olive oil (divided)
- 2 pounds bone-in chicken thigh skinless (patted dry. Skin on or off is fine)
- 1 pound potatoes (cut into one-inch pieces)
- 1 tablespoon fresh rosemary leaves (or 1/2 tablespoon dried rosemary, preferably ground)
- 4 anchovy fillets (or 2 teaspoons anchovy paste)
- 2 garlic cloves (peeled and chopped)
- 2 tablespoons capers (drained)
- 1 teaspoon Aleppo pepper
- 1 cup white wine
- salt
- pepper
- 2 tablespoons chopped parsley (optional, as a garnish)
Instructions
- Preheat the oven to 425°
- Place a large skillet over a medium-high heat. When the skillet is heated, add the olive oil, then the chicken. Sprinkle with salt and pepper. Cook until the chicken has browned on both sides, approximately 7-10 minutes Â
- While the chicken is cooking, in a large bowl, combine the potatoes, rosemary, anchovies, garlic, capers, Aleppo pepper, and 2 tablespoons of olive oil
- When the chicken is browned, turn it skin-side up, and add the potato mixture to the pan. Place it around the chicken, and add the wine to the pan. Bring it to a simmer
- Place the pan in the heated oven, and cook for 15-20 minutes, or until the chicken and potatoes have cooked through
- Adjust the flavor to your taste, with salt and black or Aleppo pepper
- Garnish with parsley, and serve with a favorite vegetable
