Saffron Rice Pilaf
Adding saffron to this simple vegetable-filled pilaf makes this great side dish just a bit more elegant!

Ingredients

  • 1 tablespoon olive oil
  • 1 red pepper (seeded and finely diced)
  • 1 onion (small. Peeled and finely diced)
  • 2 garlic cloves (peeled and minced)
  • 1 cup white rice
  • 2 cups chicken stock (or vegetable stock)
  • â…› teaspoon saffron (a pinch)
  • 1 zucchini (skin only, finely diced)
  • 1 summer squash (skin only, finely diced)
  • 3 scallions (sliced for garnish (optional))
  • salt
  • pepper

Instructions

  • Place a saucepan over a medium heat. When it’s heated, add the olive oil, then the red pepper and onion. Sprinkle with salt and pepper, and sauté for 5 minutes, or until the vegetables star to cook through. Add the garlic, and sauté until it’s fragrant, approximately 30 seconds
  • Add the rice, and mix thoroughly with the vegetables. Add the stock and saffron, bring to a boil, and cover. Reduce the heat to low, and simmer for 12 minutes. Remove the lid, and place the diced zucchini and summer squash skins on top of the rice. Place Cover again, and continue to cook for 5 more minutes, or until the rice is cooked to your liking
  • Garnish with the scallions, and serve
