Ingredients

  • 1 ½ lbs salmon fillet
  • 1-2 tbsp olive oil
  • salt
  • pepper
  • ¼ cup parsley, finely chopped
  • ¼ cup parmesan cheese

Instructions

  • Preheat the oven to 450°
  • Combine the salmon, olive oil, and a generous sprinkle of salt and pepper
  • Cover a sheet pan with parchment paper, and place the salmon on it. Bake this for 10 minutes
  • While the salmon is cooking, combine the parsley and parmesan. You can do this a few hours ahead of time
  • After the salmon has cooked for 10 minutes, remove from the oven, and cover it with the parmesan mixture. Continue to cook for 3-5 minutes longer, or until the salmon is cooked to your liking

Notes

Yield: 4 servings
NOTE: It’s fine if you don’t have parchment paper. This just helps prevent the salmon from sticking to the pan
