Sausage, Kale, and White Bean Soup
This hearty soup is perfect as a starter or the main course! Gluten free and great tasting, t can be ready in less than 40 minutes. It's even better with this homemade sausage.

Ingredients
- 1 pound ground Italian turkey sausage (see note below)
- 2 tablespoons olive oil (divided)
- 1 onion (peeled and diced )
- 2 celery stalks (diced)
- 1 carrot (peeled and diced)
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 6 cups chicken stock
- 2 15 oz cans cannellini beans (or Navy, etc.)
- 1 Parmesan cheese rind (optional)
- 1 bay leaf
- 2 kale stalks (stem removed, chopped into small peices)
- salt
- pepper
Instructions
- Place a stockpot over a medium high heat. When it’s heated, add 1 tablespoon of oil, then the sausage, and sauté until it’s cooked through, breaking it up into small pieces, for approximately 5 minutes. When it’s done, place the sausage in a bowl, and return the stockpot to the burner. Reduce the heat to medium
- Add the remaining olive oil to the pan, and add the onion, celery and carrot. Sprinkle with salt and pepper, and sauté for 5 minutes, or until the vegetables start to cook through, and soften a bit
- Add in the rosemary and oregano to the pan, and stir until it becomes fragrant, around 30 seconds
- Add in the stock, beans, Parmesan cheese rind, bay leaf, and cooked sausage. Bring to a light boil, and simmer for 15 minutes
- Remove the bay leaf and Parmesan rind, and add the kale. Simmer for 5 minutes, or until the kale has wilted and is no longer crunchy
- Adjust the seasoning with salt and pepper, and serve with grated Parmesan cheese
Notes
NOTE: This works best with ground, raw sausage. If you have raw sausage links, you can chop them up and cook them. Or, if you have cooked sausages, chop them up, and brown them before continuing with the recipe
