Sausage with Broccoli and Pasta
This is not your regular broccoli and pasta recipe. How about simmered and pureed broccoli, to make a unique sauce? This is a keeper. And with a change of sausage, it can be plant-based, too!

Ingredients
- 2 broccolis (full heads/florets and stalks)
- 2 tablespoons olive oil
- 1½ pounds turkey sausage (meat only, casing removed. Can be any kind of sausage, such as sweet Italian, or even a pork-based sausage)
- 4 garlic cloves (peeled )
- ¼ cup white wine
- 1 pound pasta (any kind that you'd like)
- ½ cup almonds (or pine nuts)
- ¼ cup parmesan cheese (freshly grated)
- salt
- pepper
Instructions
- There’s some jumping back and forth between two pots while preparing this dish. This may sound complicated, but with just a handful of ingredients, it’s a smooth way to truly complete this dish
- Bring a large pot of water to a boil. While it’s heating, cut the broccoli stalk from the florets and stem. Break the remaining head of broccoli into 3 or 4 sections. Peel the outer layer off the stems. Cut the stems, lengthwise, into four pieces. Set aside a large bowl filled with ice water (this is an ice bath)Â
- When the water has boiled, add the broccoli, including the stems, reduce the heat to medium-low, and simmer for 10 minutes. Then, remove the broccoli with a slotted spoon, and place it in the ice bath. Save the water and stock pot for the pasta
- While the pasta is cooking, place a large skillet over a medium-high heat. When it’s heated, add the olive oil, then the sausage and garlic. Stir as needed, until the sausage is cooked through. While the sausage is cooking, remove the garlic from the pan, after it’s become tender and started to brown, and set this aside.Â
- After the sausage is cooked, add the wine to the pan, and scrape up any bits in the pan (this is de-glazing). Remove from the heat, and set aside, with the sausage in the panÂ
- In the boiling water from the broccoli, cook the pasta, per the instructions on the package
- While the pasta is cooking: in a food processor, add the garlic, broccoli, almonds. Sprinkle with salt and pepper. Add in some pasta water (start with ¼ cup) to give the broccoli a smoother texture
- If the skillet with the sausage has cooled, heat it over a medium-high heat. When it’s hot, add the broccoli mixture, and thoroughly combine.Â
- When the pasta is cooked, reserve a cup of the pasta water. Drain the pasta, and combine this with the sausage and broccoli mixture. If the skillet isn’t large enough to hold all of this, combine this in a large bowl
- Mix in the parmesan cheese, and serve
