Savory Dutch Baby
This is a cross between a Yorkshire Pudding, a Quiche, and big Cheese Puff. It's perfect for lunch, a light dinner, or even sliced thinly with cocktails or mocktails!

Ingredients
- 1 cup plus 2 tablespoons flour
- ½ teaspoon kosher salt
- ½ teaspoon black (pepper)
- 8 large eggs
- ¾ cup whole milk
- 2 tablespoons fresh thyme (finely chopped)
- 2 tablespoons chives (parsley or tarragon, minced)
- 6 tablespoons unsalted butter
- ¾ cup parmesan cheese (or Gruyere, grated)

Instructions
- Heat oven to 425°Â
- In a large bowl, whisk together flour, salt and pepper
- In a separate bowl, whisk together eggs and milk. Whisk wet ingredients into dry until just combined. You don’t have to worry if there’s a lump or two of flour in the pan. Stir in the thyme and the other herbs. Set this aside
- Melt the butter in a heavy 12-inch ovenproof skillet over a medium-high heat. Let it cook until it smells nutty, and turns brown, about 5 minutes. Then swirl the skillet so the butter coats the sides of the pan
- Pour the batter into the pan and scatter the cheese over the top. Sprinkle with salt. Bake until puffed and golden, about 18-25 minutes
- Serve immediately, with salad and your favorite crusty bread. Or, in thin wedges with cocktails or mocktails
