This simple seafood burger has no fillers or eggs. The secret to holding it together? The chopped shrimp. Really!

Ingredients

  • ½ pound shrimp (peeled and deveined, cut into thirds)
  • 12 ounces cod fillet (cut into ½" cubes)
  • ¼ cup scallions (or parsley, chives, or other herbs, finely chopped)
  • salt
  • pepper
  • 2 tablespoons grapeseed oil (divided. Or other neutral oil, such as safflower or canola)
  • 4 hamburger buns
  • lettuce
  • 1 tomato (sliced)
  • 8 dill pickle slices

Instructions

  • In a food processor, pulse the shrimp a few times, just until finely chopped and a coarse paste is form. Transfer to a large bowl and add the cod, ¼ cup of the scallions (or other herbs), and sprinkle with salt and pepper. Mix it well 
  • Moisten your hands with water, then form the mixture into 4 patties. Coat the patties lightly with the oil
  • Heat a large skillet (or grill) over a medium heat. When it’s heated, lightly oil the skillet or grates. Cook the burgers until lightly browned and just cooked through, 4 to 5 minutes per side. The internal temperature should be at least 135°F
  • Serve with lettuce, tomato, pickle slices, and tarter sauce or remoulade sauce
