Ingredients

  • 8 ounces button mushrooms (or cremini. Approximately 4 cups. Halved or quartered, if large)
  • 4 plum tomatoes (halved lengthwise)
  • 2 tablespoons olive oil (plus more for drizzling)
  • 1 teaspoon Worcestershire sauce (plus more for serving)
  • 3 thyme sprigs (optional)
  • 6 breakfast turkey sausages (or pork or vegetarian, either cooked or uncooked)
  • 4 eggs
  • salt
  • pepper

Instructions

  • Heat oven to 450°. Set aside a rimmed sheet pan
  • In a medium bowl, toss together the mushrooms, tomatoes, olive oil, Worcestershire sauce, thyme sprigs and a pinch each of salt and pepper. Place the sausage links onto the sheet pan, and spread the vegetables evenly around the sausages. Bake until browned and crisp, 15 to 20 minutes, tossing halfway through
  • While the sausages and vegetables are baking, break the eggs into two bowls and set aside
  • When the sausages and vegetables are done, take the pan out of the oven and use a spatula to push the vegetables and sausages to one side. Drizzle the empty side of the pan with a little olive oil, then gently pour the eggs onto the olive oil. Sprinkle the eggs lightly with salt and pepper. Immediately return the pan to the oven and roast until the whites are just set, the yolks are still runny, 3 to 5 minutes longer. If you prefer medium or hard egg yolks, cook a minute more
  • Using a spatula, cut the eggs apart. Slide them off the pan and onto plates right away to stop the yolks from continuing to cook. Discard the thyme sprigs, and serve the vegetables and sausages with the eggs, drizzling with a dash of Worcestershire sauce, and more salt and pepper, if you’d like. Serve with buttered toast
